When changing colors, what I do is twist the the old yarn & the new yarn together - when I pick up the new yar to knit, I lay old color across it so I'm picking it up with it. I'm sorry, it is a bit hard to explain. This tutorial may be helpful.
As for the mess behind the scenes, I normally just work in the ends as I go - otherwise, I would just go crazy :)
Hope this helps!

About Me:
I have a drapery workroom and upholstery shop... love to sew! I'm also an interior decorator and love COLOR - FABRICS and YARN! I love to knit and crochet also, in my spare moments.
My love for knitting has been recent. I learned to knit as a child, but my learning was slow. In the recent year or two, I just decided I wanted to take my knitting to the next level and stick with a pattern until it was finished. (There were many unfinished projects when I got stuck!) So now I am knitting more than a dish cloth... love to sew sweaters and felted bags, etc.
